New Year's Black-eyed Peas

Eating black-eyed peas on New Year’s Day is supposed to give you luck in the upcoming year. I wasn’t exactly prepared for this, so I came up with this quick version. It was delicious. My husband raved about it!

 
  • 2 cans black eyed peas, drained

  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 2 cloves garlic, minced

  • 3 slices turkey bacon, chopped

  • 1 link andouille turkey sausage, sliced

  • 1 14.5 oz. can of chopped tomatoes.  I used fire roasted.

  • ¼ -1/2 cup chicken stock.

  • ½ tsp garlic powder

  • ½ tsp thyme

  • 1 tsp smoked paprika

  • 2-3 handfuls (about 1 ½ cups) of spinach or chopped collards, kale or swiss chard

 

Directions

  1. Heat up olive oil in pan.  Add & sauté chopped onions, turkey bacon and andouille sausage until onions soften.

  2. Add garlic, garlic powder, thyme and smoked paprika and sauté for 1 minute.

  3. Add the tomatoes, chicken stock and spinach.

  4. Simmer until sauce is reduced.
