Yummy Tex Mex Salad!
Here is a colorful, yummy Tex Mex Salad that is always a hit at parties! Eating more plant-based foods is good for the environment by lowering your carbon footprint.
Tex-Mex Black Bean and Corn Salad with Feta
Serves 6. Prep time 30 minutes.
Ingredients:
1 15 ounce can black beans, rinsed and drained. See Note.
1 cup corn kernels, fresh or frozen (thawed)
1 large tomato, seeded and diced
1 medium green pepper, diced
1 bunch green onions, diced
1 tablespoon jalapeno pepper, finely chopped
2 cloves garlic, minced
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons Dijon mustard
¼ cup fresh lime juice (about 2 limes)
2-3 drops of Lime Vitality essential oil
2 drops Black Pepper
¼ cup olive oil
Salt and pepper to taste
Optional: 8 ounces feta cheese, crumbled
Optional: chopped cilantro
Directions:
In a small mixing bowl, whisk together the garlic, chili powder, cumin, lime juice, Dijon mustard and olive oil to make the dressing. If you use Lime and Black Pepper Vitality oils, they punch up flavor & your immune system.
In a large missing bowl, combine the beans, corn, tomato, green pepper, green onions, and jalapeno pepper. Add the dressing, mix well and season with salt and pepper. Top salad with crumbled feta cheese.
Serving suggestions: This salad is a meal in itself. It is a complete protein.
It is also a great salad that can be served with grilled fish or burgers. You can add diced cooked chicken to the salad and serve on a bed of greens or soft corn tortilla shell.
Note: I recommend by can goods without BPA in the lining. Look for one like Eden Brand, who do not use it. Bisphenol A is a serious hormone disrupter. You can eliminate 66% of you BPA intake by not eating canned goods. Use dried or frozen foods or Eden Brand canned goods to avoid BPA.
