Yummy Gluten-free Cornbread

My husband loved this & he doesn’t like cornbread. I made a 11X8 inch pan + 2 small loaves. You can freeze 1/2.

My husband doesn’t like cornbread but he loved this one. It makes quite a bit so you can freeze half. I served it with a little honey & butter. It is a quick, easy and yummy recipe. It is vegan too.

Gluten-free Cornbread

Servings: 16

Prep Time: 10 minutes

Cooking Time: 20 minutes

 Ingredients

4 T ground flax

½ cup + 2T water

2 cups gluten-free flour (I used Bob’s Red Mill)

2 cups cornmeal (I used Bob’s Red Mill courses grind)

2 T +2 tsp baking powder

1 cup coconut sugar

2 tsp salt

½ cup olive oil

2 cups soy, almond or oat milk

 

Directions

1.       Preheat oven to 425 F

2.       Grease pan

3.       Whisk flax & water in a small bowl.

4.       In a larger bowl, mix gluten-free flour, cornmeal, baking powder, coconut sugar and salt.

5.       Add oil, milk and flax mixture to the large bowl of dry ingredients. Mix.

6.       Pour into the pan.  It should be about an inch deep.  (I used an 11”X8” pan and had enough left over for 2 small loaf pans).

7.       Bake 20 minutes.

8.       Test with a toothpick.  It should come out clean.  Cook 5 minutes longer if necessary.

9.       Cool for 30 minutes.  Cut into 16 pieces.
