Yummy German Potato Cabbage Soup
MMMM... Nothing warms you up on a cool fall night than a hearty soup!
I was at an Octoberfest celebration where they served a great tasting creamy German Potato Cabbage Soup. I wanted to come up with a healthier version without all the cream and fatty sausage. My friends and family actually thought mine tasted better. Yes!!!!
This has become one of my family’s and friend’s favorites. It has a sweet/sour mustard seasoning that is absolutely fabulous. This will warm you up on a cool night!
I have included how to adapt for a vegetarian version.
Linda’s German Potato Cabbage Soup
Ingredients:
4 peeled and chopped medium potatoes
2 sliced celery stalks
4 cups Chicken Broth (Use vegetable broth for vegetarian version)
1 chopped onion
For spicier version use higher amount for next 4 ingredients:
4 or 6 tbsp of vinegar
2 or 3 tsp pepper
2 or 3 tbsp sugar
2 or 3 tsp dry mustard
salt to taste
1 smoked turkey leg or 8 ounces of sliced cooked smoked chicken or turkey sausage (Can leave out for vegetarian version)
2 cups shredded cabbage
Instructions:
Sauté onion until softened in a little olive oil in large soup pan.
Add chicken broth, turkey leg, potatoes, celery and cabbage. Add water if necessary. Bring to a boil then turn down to simmer. When potatoes are soft, take the turkey legs out. Cut into small pieces.
While soup is cooking, combine the sugar, vinegar, dry mustard, salt, and pepper in a small mixing bowl.
Transfer the rest of the soup to a blender or use an immersion blender to blend into a creamy soup.
Stir in the vinegar/mustard seasoning.
You can also top with fresh parsley as a garnish and added color. Enjoy!
