Yummy Tandoori Chicken Skewers

Tandoori Chicken Skewers
Sevres 6. Prep time 20 minutes, then marinade for 2 hours. Cook time 10 minutes.
Ingredients
6 (4-ounce) boneless, skinless chicken breasts halves, cut into ½ inch strips or cubes
¼ cup low fat plain yogurt
1 T olive oil
½ t ground coriander
¾ t peeled chopped fresh ginger
¼ t salt
½ t cumin
¼ t turmeric
¼ t black pepper
Directions
Place all the marinade ingredients in a food processor, process until smooth, scraping sides of processor bowl once. Combine yogurt mixture and chicken in covered glass dish and refrigerate for 2 hours, turning chicken in marinade occasionally. I prefer this to a zip lock plastic bag because it is more environmentally friendly.
Remove chicken strips onto 24 6-inch skewers. Place skewers on broiler pan coated with cooking spray or oil. Broil 6 minute on each side or until chicken is done. Arrange skewers on a serving platter with rice and dipping sauce.
Traditional Indian Dipping Sauce
½ cup plain yogurt
½ cup chopped, peeled and seeded cucumber
2.5 T chopped fresh cilantro
3 t fresh chopped green onions
¼ t ground coriander
¼ t ground cumin
Combine all ingredients and season to taste with salt. Chill until ready to serve.
